- Provide 275 grams self-raising flour
- Prepare 1/2 tsp bicarbonate of soda

- Dry ingredients - in same bowl: flour, soda, cinnamon, spice mix, nutmeg, walnuts and raisins
- In large bowl, using an electric hand mixer, whisk together the eggs, then add sugar, until pale and fluffy. With the mixer still on, pour the oil into the bowl, in a steady stream, and mix until it is completely incorporated, then mix in the vanilla extract.

- Preheat the oven to 180C/160C fan/gas mark 4. Grease mixture in two or three 23cm springform
- Prepare the frosting by beating the cream cheese, butter, icing sugar and cinnamon until you have a smooth, spreadable mix. Assemble the cake by spreading each layers with cream cheese frosting.
