- In a pressure cooker, cook cauliflower, pumpkin, bottle gourd and peas till soft. Slice butter in cubes as not to add all at once but do it gradually over the process of cooking.
- Take a pan and oil and a cube of butter in it. Add ginger and garlic and roast till golden brown. Then add green chilli and onions to it. Cook till onions turn soft. Add tomatoes and cook for 5 minutes. Add some butter and let it absorb the flavor in it. Add turmeric, salt, kashmiri chilli powder and Coriander powder to it. Cook till all the masalas are cooked.
- Mash the boiled veggies and add them to the masala. Add more butter so that all the flavours are well merged. Add mashed potato and add some butter to it. Add some water and cook for 10 minutes on slow flame. Add pav bhaji masala and cook for 10 minutes. Finally add lemon juice and coriander leaves and mix really well.
- To serve butter the pav and grill them on the tava or a grill pan. Serve them hot.
