- Provide 1 kg potatoes
- Provide 4 garlic cloves, minced
- Use 1/8 of a cup of celery, diced
- Take 6 tbsp flour
- Get 6 tbsp cooking oil
- Provide 2 tsp mixed spices
- Use 2 tsp royco mchuzi mix
- Prepare 1 tsp turmeric spice
- Provide 2 tsp cardamom spice
- Take 1 tsp salt
- Provide 1/2 tsp black pepper
- Take 1/2 tsp cayenne spice
- Get 1 tsp garam masala spice mix

- Clean the potatoes carefully to remove any dirt. Peel half of the potatoes and leave the other half with the skin
- Boil about a litre of water.
- Slice half of the potatoes into quarters with the skin on and for the other half, peel of the skin then slice them into wedges.
- When the water is boiling, add a little salt then add in the potato wedges and cook them for 4 minutes. Drain and let them cool for about 5 - 10 minutes.
- Preheat oven to 180°c

- Sprinkle small portions at a time of the spices to the wedges while tossing.
- Pour some oil on a baking tray and spread evenly. Arrange the potatoes on the tray.
